A delicious dessert cake that splits into 3 layers as it cooks.
Ingredients
- 4 eggs room temperature separated
- 1 tsp vanilla extract
- 150 g sugar
- 125 g butter melted
- 115 g plain flour
- 500 ml milk warmed
- 1/2 cup icing sugar *to decorate
Method

Step 1Preheat oven to 160C. Grease a 20cm x 20cm baking dish.

Step 2Separate eggs and add egg whites into a mixing bowl and mix until egg whites are stiff. Set aside.

Step 3Beat egg yolks with sugar until light. Add butter and vanilla extract and continue beating for another minute or two. Add the flour and mix until well combined.

Step 4Slowly start adding the lukewarm milk and beat until all ingredients are mixed together. Add the egg whites a third at a time, gently fold in using a spatula. Repeat until all egg whites are folded in.

Step 5Pour batter into baking dish and bake for 50-70 minutes, or until the top is golden. The cake will be wobbly in middle due to custard.

Step 6Sprinkle icing sugar on cake when cooled.

This cake is so delicious, I dare you to stop at one piece. You can have a dollop of cream with if you desire.
