Ingredients

  • 1 tbs oil diced
  • 1 onion diced
  • 500 g macaroni
  • 200 g smoked bacon diced
  • 1 stick kabana sausage
  • 2 tbs butter
  • 2 cup milk
  • 1/2 cup plain flour
  • 500 g cheese grated

Method

  • Step 1
    Fry onion in a little oil with the bacon until the onion has softened.
  • Step 2
    Cook the macaroni as per packet instructions, drain and set aside.
  • Step 3
    Melt the butter in a medium saucepan.
  • Step 4
    Remove from heat and add enough flour to form a thick paste.
  • Step 5
    Gradually add the milk, stirring well and making sure there are no lumps.
  • Step 6
    Return saucepan to stove and slowly heat, stirring constantly until sauce thickens. Add 2/3 of the cheese and stir until melted through.
  • Step 7
    Place onion, bacon, kabana and cheese sauce in with the macaroni, stir until well combined.
  • Step 8
    Place in a large casserole dish or baking tin and sprinkle with remaining cheese.
  • Step 9
    Bake at 200C for approximately 30-40 minutes or until the cheese browns.

Recipe Notes
Kabana can also be replaced with approximately 400 g browned chicken fillets.
