Lovely vanilla fudge. My grandmother sent us some of this with the recipe from the UK one Christmas. It has become traditional for me to make it every Christmas. - Arlinja

Ingredients

  • 2 tbs golden syrup
  • 3 tbs water
  • 85g butter
  • 450g caster sugar
  • 395g condensed milk
  • 3 drops vanilla essence

Method

  • Step 1
    Place syrup, water, butter, essence and sugar in a saucepan, heat slowly until sugar has dissolved.
  • Step 2
    Add condensed milk, continue boiling slowly for 10 - 15 minutes or until golden brown and at soft ball stage. Be careful it does not burn on the bottom of the saucepan.
  • Step 3
    Remove from heat and beat until thick and shiny.
  • Step 4
    Pour into greased dish and set in fridge.
