Comfort food in a flash. Scrumptious sweet potatoes stuffed with smoked bacon, sauteed broccolini and the zesty citrus and herbs fetta!
Ingredients
- 2 tbsp olive oil
- 4 sweet potatoes
- 4 rashes smoked bacon
- 450 g broccoli or broccolini, halved horizontally
- 2 garlic cloves, crushed
- 1/2 tsp dried chilli flakes
- 185 g Castello Citrus and Herbs Fetta
Method

Step 1Pre-heat your oven to 200˚C / 180˚C fan.

Step 2Season the sweet potatoes, drizzle with oil then bake on the middle shelf for 40 minutes.

Step 3After 30 minutes, start preparing the topping. Using a non-stick frying pan, fry the bacon over medium heat for 30 seconds, then add the broccoli and stir-fry for one minute.

Step 4Cover the pan and cook for 3 minutes then add the crushed garlic and chilli. Stir-fry for 30 seconds and cook uncovered for another 3 minutes.

Step 5Remove the sweet potatoes from the oven and cut each along its middle. Load with the broccoli and bacon mix, and top with fetta cubes.
