Lighter than a meatloaf but more substantial then a frittata. An easy dish if you have to take a meal somewhere.
Ingredients
- 500 g beef mince
- 1 onion chopped
- 1 red capsicum
- 1 green capsicum
- 1 carrot
- 1 zucchini
- 2 potato large
- 2 tsp curry powder
- 1 tbs lemon juice
- 5 egg
- 2 tomato sliced
- 1/4 cup chives
Method

Step 1Grate or finely chop vegetables.

Step 2In a large frying pan, cook onion and capsicum until softened.

Step 3Add carrot, potatoes and zucchini and cook until vegetables are soft. Transfer to a bowl.

Step 4Using the same frying pan, brown the mince.

Step 5Stir in curry powder and then lemon juice. Season to taste.

Step 6Cover pan and simmer for about 15 minutes.

Step 7Combine meat and vegetables and allow to cool. Mix in beaten eggs.

Step 8Pour into 23 cm shallow square container. Arrange tomato slices on top.

Step 9Bake at 180C for about 25 minutes or until set.

Step 10Garnish with chopped chives or parsley.
