Ingredients

  • 500 g beef mince
  • 1 onion chopped
  • 1 red capsicum
  • 1 green capsicum
  • 1 carrot
  • 1 zucchini
  • 2 potato large
  • 2 tsp curry powder
  • 1 tbs lemon juice
  • 5 egg
  • 2 tomato sliced
  • 1/4 cup chives

Method

  • Step 1
    Grate or finely chop vegetables.
  • Step 2
    In a large frying pan, cook onion and capsicum until softened.
  • Step 3
    Add carrot, potatoes and zucchini and cook until vegetables are soft. Transfer to a bowl.
  • Step 4
    Using the same frying pan, brown the mince.
  • Step 5
    Stir in curry powder and then lemon juice. Season to taste.
  • Step 6
    Cover pan and simmer for about 15 minutes.
  • Step 7
    Combine meat and vegetables and allow to cool. Mix in beaten eggs.
  • Step 8
    Pour into 23 cm shallow square container. Arrange tomato slices on top.
  • Step 9
    Bake at 180C for about 25 minutes or until set.
  • Step 10
    Garnish with chopped chives or parsley.
