Yummy lentil burgers! Enjoyed by my 2 year old too.
Ingredients
- 1 carrot grated
- 1 zucchini grated
- 1/2 onion finely chopped
- 2 garlic cloves minced
- 1 tsp ground cumin
- 400g brown lentils
- 1/2 cup wholemeal plain flour
- 1/2 cup fresh breadcrumbs
- 2 tbs chia seeds
- 1 tbs pepitas
- 1 tbs sunflower seeds
- 2 tbs fresh coriander chopped
- 1 egg
- 2 tbs water
Method

Step 1Sauté onion, carrot, zucchini, coriander, garlic and cumin in a frypan until soft.

Step 2Place in bowl and add remaining ingredients until well mixed.

Step 3If necessary, add extra flour or breadcrumbs if too wet or extra water if too dry.

Step 4Divide mixture and shape into patties.

Step 5Place on a plate lined with baking paper and refrigerate for at least an hour.

Step 6Preheat oven to 180C.

Step 7Heat fry-pan and cool patties for 3-4 minutes either side being careful not to burn.

Step 8Place on baking paper lined tray and place in the oven for 5-10 minutes to cook through.

Step 9Serve chopped up in a salad or in rolls with all the burger fillings.
Recipe Notes
Nice served with sweet chilli sauce or garlic yoghurt.
I don't ever measure ingredients so the quantities may be a bit off, just add more or less until you get a combination that holds together well.
