Ingredients

  • 1 carrot grated
  • 1 zucchini grated
  • 1/2 onion finely chopped
  • 2 garlic cloves minced
  • 1 tsp ground cumin
  • 400g brown lentils
  • 1/2 cup wholemeal plain flour
  • 1/2 cup fresh breadcrumbs
  • 2 tbs chia seeds
  • 1 tbs pepitas
  • 1 tbs sunflower seeds
  • 2 tbs fresh coriander chopped
  • 1 egg
  • 2 tbs water

Method

  • Step 1
    Sauté onion, carrot, zucchini, coriander, garlic and cumin in a frypan until soft.
  • Step 2
    Place in bowl and add remaining ingredients until well mixed.
  • Step 3
    If necessary, add extra flour or breadcrumbs if too wet or extra water if too dry.
  • Step 4
    Divide mixture and shape into patties.
  • Step 5
    Place on a plate lined with baking paper and refrigerate for at least an hour.
  • Step 6
    Preheat oven to 180C.
  • Step 7
    Heat fry-pan and cool patties for 3-4 minutes either side being careful not to burn.
  • Step 8
    Place on baking paper lined tray and place in the oven for 5-10 minutes to cook through.
  • Step 9
    Serve chopped up in a salad or in rolls with all the burger fillings.
Recipe Notes

Nice served with sweet chilli sauce or garlic yoghurt.

I don't ever measure ingredients so the quantities may be a bit off, just add more or less until you get a combination that holds together well.
