A refreshing drink that uses lots of lemons when they're plentiful.
Ingredients
- 1 cup sugar
- 1/2 cup water
- 2 cup lemon juice
- 2 L cold water
- 2 cup ice cubes *to serve
Method

Step 1Place sugar and ½ cup of water in a large saucepan and bring to the boil. Stir until sugar has dissolved, then remove from heat.

Step 2Add lemon juice and 2 L of water, whisk and place in a jug, or in bottles.

Step 3Refrigerate and serve with ice cubes.
Recipe Notes
Make sure you use a big saucepan as there is close on 3 litres of liquid in the end. Keeps in the fridge for several days - if it lasts that long! This is not like a cordial and does not need to be watered down.
