Ingredients

Lemon cake base

  • 125g melted butter
  • 1 cup plain flour, sifted
  • 3/4 cup caster sugar
  • 3 eggs
  • Zest from 1 large lemon
  • Juice from 1 large lemon
  • 1/2 tsp baking powder

White chocolate icing

  • 150g white chocolate
  • 1/2 cup sweetened condensed milk

Method

  • Step 1
    Preheat the oven to 170℃. Grease and line a 22-24cm square cake tin with baking paper.
  • Step 2
    Place all of the cake ingredients into a mixing bowl and mix until a smooth batter forms. Pour the batter into the cake tin and bake for 30 minutes or until golden and cooked through. Allow to cool completely in its tin.
  • Step 3
    Melt the white chocolate in the microwave in a glass bowl in 30 second increments until smooth. Add the condensed milk and mix until combined. Pour over the top of the cooled lemon cake and finish with extra lemon zest on top.
