When a recipe is this good you've got to share it - pastry base, sweet lemon filling with a light meringue topping.
Ingredients
- 2 egg
- 3 tbs sugar
- 1 pinch salt
- 75 g butter melted
- 1 1/2 cup plain flour
- 1 tsp baking powder
Filling
- 6 egg yolks
- 395 g sweetened condensed milk
- 3/4 cup lemon juice
- 1 tbs lemon rind
Meringue topping
- 6 egg whites
- 1 cup sugar
Method

Step 1Preheat oven to 140C.

Step 2To make the base, beat eggs, add sugar, salt and melted butter and mix.

Step 3Combine flour and baking powder, beat to form a dough then press into a pie tin.

Step 4Bake in for 5 minutes while preparing the filling.

Step 5To make the filling, beat all ingredients together, pour over base.

Step 6For the meringue topping, beat egg whites, gradually adding sugar until stiff peaks form, for 5-10 minutes.

Step 7Pipe or spread meringue over the filling.

Step 8Bake for 25-30 minutes.

Step 9Turn the oven off leaving pie in the warm oven for approximately 1 hour.
