Cooked in a pie maker, you will have people clamouring to get their hands on these easy mini lemon custard tartlets!
Ingredients
- 300g flour
- 150g butter
- 1 1/2 tbs sugar
- Splash of cold water
Filling
- 3 egg yolks
- 1/3 cup sugar
- 1 tbs custard powder
- 1 cup full cream milk
- 2 tbs sour cream *optional
- 1/3 cup lemon juice
Method

Step 1To make the pastry, place the flour into a bowl and add small cubes of butter. Use your fingers to rub the butter into the flour until it resembles fine grains of sand.

Step 2Add 1 1/2 tbs sugar, stir to combine, and then add a splash of water. Mix and then knead to form a ball. Place in a bowl with a lid on it and rest the dough in the fridge for up to 30 minutes.

Step 3Meanwhile, whisk the egg yolks and 1/3 cup sugar together in a large bowl until thick and creamy. Add the custard powder and mix through.

Step 4Heat the milk and sour cream if using in the microwave for 50 seconds. Gradually add the dairy mixture to the egg mixture while continuing to whisk. Gradually add in the lemon juice. Pour into a jug.

Step 5Turn on the pie maker to allow it time to heat up. Roll out the pastry so that it is around 2-3mm thick. Cut into rounds large enough to cover the base of the pie maker.

Step 6Gently press pastry rounds into the pie maker. Pour in the custard mixture so that it comes 3/4 of the way up to the lip of the pastry.

Step 7Close the pie maker and cook for around seven minutes.
Recipe Notes
You can use corn flour instead of custard powder and feel free to add more lemon juice if you prefer a stronger flavour.
