A delicious dessert that can be eaten hot or cold and is easy to make and economical.
Ingredients
- 125g butter
- 125g sugar
- 125g Woolworths Essentials Self-Raising Flour
- 1 1/2 cups coconut
Filling
- 125g sugar
- 3 tbs cornflour
- 1/2 tsp salt
- 2 cups milk
- 1 tsp lemon rind grated
- 1/2 cup lemon juice
- 2 tbs butter
- 2 eggs lightly beaten
Method

Step 1Crumble: Rub together all crumble ingredients.

Step 2Press half into a pie plate.

Step 3Filling: Blend cornflour, sugar and salt with a little milk.

Step 4Heat remaining milk, then add to the cornflour mixture to make a custard, then cook until it thickens.

Step 5Add rind, juice, butter and lastly lightly beaten eggs.

Step 6Pour onto crumb crust and then sprinkle remaining half of crumble on top of the mixture.

Step 7Bake 20 minutes at 180C or until set.
