A delicious dessert that can be eaten hot or cold and is easy to make and economical.

Ingredients

  • 125g butter
  • 125g sugar
  • 125g Woolworths Essentials Self-Raising Flour
  • 1 1/2 cups coconut

Filling

  • 125g sugar
  • 3 tbs cornflour
  • 1/2 tsp salt
  • 2 cups milk
  • 1 tsp lemon rind grated
  • 1/2 cup lemon juice
  • 2 tbs butter
  • 2 eggs lightly beaten

Method

  • Step 1
    Crumble: Rub together all crumble ingredients.

    Press half into a pie plate.
  • Step 3
    Filling: Blend cornflour, sugar and salt with a little milk.
  • Step 4
    Heat remaining milk, then add to the cornflour mixture to make a custard, then cook until it thickens.
  • Step 5
    Add rind, juice, butter and lastly lightly beaten eggs.
  • Step 6
    Pour onto crumb crust and then sprinkle remaining half of crumble on top of the mixture.
  • Step 7
    Bake 20 minutes at 180C or until set.

  • 1 pie pans
