Traditionally eaten during the Mid-Autumn Festival (or also known as Moon Festival), we make it easy to enjoy Chinese mooncake at home with these lemon and coconut flavoured cakes that can be made in your pie maker.
Ingredients
- 250g cream cheese
- 1/4 cup caster sugar
- 1 lemon, zested, juiced
- 1 egg
- 1 cup desiccated coconut
- 3 sheets frozen puff pastry, defrosted
Method

Step 1In a food processor, combine cream cheese, sugar, lemon zest and juice, egg and coconut until smooth.

Step 2Preheat pie maker according to manufacturer’s instructions. Use cutter to make six bases and six tops. Use a mooncake mould to press patterns into the top pieces. Line pie maker plates with bases. Fill with cream cheese mixture. Top with patterned pieces. Close lid and bake for 8 minutes until golden.

Step 3Repeat with remaining ingredients.
