This is my mum's recipe. Pat is the best chef I know. This is moist and delicious.
Ingredients
- 1 cup Greek yoghurt
- 1 cup sugar
- 1 tsp vanilla essence
- 3 egg lightly beaten
- 1 lemon juiced zested
- 1/2 cup vegetable oil
- 1 1/2 cup self-raising flour
- 1/2 tsp salt
- 1 tsp baking powder
Lemon syrup
- 1/3 cup lemon juice
- 1/3 cup sugar
Method

Step 1Whisk yoghurt, sugar, essence, eggs, lemon zest and juice in a bowl.

Step 2Add the vegetable oil and whisk again well.

Step 3In another bowl, stir together the sifted flour, salt and baking powder. Add this to the wet ingredients. Stir to blend.

Step 4Place in greased cake tin and bake at 180C for approximately 40 minutes. Allow to cool.

Step 5Lemon syrup: Dissolve lemon juice and sugar in a pot over low heat, stirring until sugar has dissolved.

Step 6Pour syrup over cake.
Recipe Notes
You can use extra lemon slices to decorate the top of the cake. This is nice with ice-cream.
