A fantastic way to use up left over lamb. This pizza reminds me of a souvlaki. I adapted it from one of Poh Ling's recipes.
Ingredients
- 1 large size pizza base, home-made or store bought
- 300 g leftover cooked lamb, chopped
- 1 teaspoon cooking oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 3 cloves crushed garlic
- 2 tomatoes, de-seeded, diced
- 1/2 red onion, finely chopped
- 1 tablespoon olive oil
- 1 pinch salt and pepper
- 100 g feta, crumbled into small chunks
- 1/2 cup Greek yoghurt
- 50 g rocket
Method

Step 1Preheat oven to 240 degrees. Prepare pizza base on an oven tray.

Step 2In a saucepan heat cooking oil and sauté 2 crushed garlic cloves. Add the spices and cook for 1 minute or until aromatic. Add the leftover lamb and mix. Take off the heat and allow to cool.

Step 3In a bowl, mix together tomatoes, red onion, remaining crushed garlic clove and olive oil. Season with salt and pepper.

Step 4Spread tomato mix over the pizza base evenly.

Step 5Top the pizza base with the lamb and crumbled feta.

Step 6Bake 10 - 15 minutes until feta is just browning

Step 7Cut up pizza and served with dollops of Greek yoghurt and rocket on the side.
Recipe Notes
You could make this pizza with fresh lamb and cook it just for this purpose. I use Letizza brand pizza bases - they are delicious.
