Leftover Christmas ham breakfast casserole

Ingredients

  • 8 eggs
  • 3/4 cup cream or milk
  • 2 tbsp chopped herbs
  • 1 cup roast or boiled potatoes chopped
  • 1 cup ham, sliced
  • 1 cup roast chicken or turkey, shredded
  • 1/2 cup rice salad
  • 1/2 cup cooked beans, chopped
  • 1 cup grated tasty cheese

Method

  • Step 1
    Preheat oven to 180C. Grease a medium oven-proof casserole dish.
  • Step 2
    In a large bowl, whisk eggs and cream or milk. Season well with salt and pepper. Add herbs and leftover Christmas dinner ingredients. Add 1/2 cup cheese. Pour into prepared dish and sprinkle over remaining cheese.
  • Step 3
    Bake for 45-50 minutes until just set - you can see by jiggling the dish. Check it at the 30 minute mark and cover with foil if it’s browning too quickly. Either serve in scoops or allow to cool slightly then slice into squares.
Recipe Notes

Let your imagination go wild with the ingredients. Any leftover roast or steamed vegetables, grain salads, meats and cheeses will work. Avoid anything too sweet or leafy salads that have been sitting in dressing.
