Got leftovers from a roast chook? This recipe is perfect midweek comfort food with the added nutritional benefit of sweet potato!
Ingredients
- 2 tbs butter
- 2 generous tbs of plain flour
- 2 cups milk
- 2 cups grated cheese
- 2 tbs breadcrumbs
- Salt and pepper
- 1 tsp of Dijon mustard
- 2 cups cooked chicken (leftover)
- 1 medium sweet potato, peeled and diced
- 1/2 cup or more of frozen peas
- 1 cup cooked white rice (optional)*
Method

Step 1Peel the sweet potato and dice it into small pieces. Place in a microwave container with a few tablespoons of water and cook on high for four minutes. Drain the liquid and set aside until needed.

Step 2Remove meat from the leftover chicken and also set aside until it is needed.

Step 3In a heavy-bottomed saucepan, melt the butter and mix in the flour. Remove from the heat, and gradually stir in the milk. When it has combined, return to the heat and stir over a medium to low heat until it thickens. Do not boil.

Step 4Remove from the heat and add 1 cup of grated cheese. Season with salt, pepper and mustard to taste.

Step 5Add the chicken and sweet potato to the cheese mixture and stir until combined. Add in the frozen peas (you do not need to cook or defrost).

Step 6Spread the cooked rice onto the base of a medium-sized baking dish. Cover with the chicken, sweet potato and pea mixture. Sprinkle with the remaining cup of grated cheese, and scatter breadcrumbs on top.

Step 7Bake in a hot oven at around 170C for up to 30 minutes. Serve hot.
Recipe Notes
Day-old cooked rice works well in this dish. You can also substitute leftover cooked pasta. It is not essential to add either, but it helps to absorb excess moisture from the vegetables.
