Easy and inexpensive, the kids will love these and it is a great way to get in some extra vegetables. Cook them on the barbeque. - Inndigogirl

Ingredients

  • 500g lamb mince
  • 1 small zucchini, grated
  • 1 small carrot, grated
  • 1 small orange sweet potato, grated
  • 1 cup tasty cheese, grated

Method

  • Step 1
    Mix all ingredients together.
  • Step 2
    Roll into rissole sized patties.
  • Step 3
    Pan fry or barbecue until cooked through.
Recipe Notes

These can stick to the pan or barbecue. I usually use baking paper or a barbecue silicon sheet underneath to stop the cheese sticking. Also, having wet hands when rolling rissoles will help to stop them sticking to your hands.
