Ingredients

  • 1 kg potato gnocchi
  • 1 tbs olive oil
  • 250 g short-cut bacon rashers coarsely chopped
  • 1 leek ends trimmed thinly sliced halved lengthways
  • 1/2 roast cooked chicken shredded
  • 200 g green beans cut into slices
  • 200 g baby spinach
  • 60 g butter
  • 1/3 cup plain flour
  • 3 cups milk
  • 1/2 cup parmesan cheese
  • 1 cup cheddar cheese grated
  • 1 tbs parsley chopped fresh *to serve

Method

  • Step 1
    Preheat oven 180C.
  • Step 2
    Cook gnocchi according to directions on packet.
  • Step 3
    Heat oil in fry pan and cook bacon and leeks for 4-5 minutes.
  • Step 4
    Add chicken, beans and spinach and cook for further 1-2 minutes.
  • Step 5
    In another saucepan melt butter, add flour and cook for 30 seconds.
  • Step 6
    Remove from heat and gradually stir in milk. Cook for 5 minutes until mixture boils and thickens.
  • Step 7
    Add chicken mixture to white sauce, then stir in the Parmesan cheese and cooked gnocchi.
  • Step 8
    Spoon mixture into a greased oven proof dish (shallow 12 cup).
  • Step 9
    Sprinkle cheddar cheese.
  • Step 10
    Bake for 40-45 minutes.
  • Step 11
    Sprinkle with parsley to serve.
