A light as air version of custard kisses. Better the day after you make them as the jam soaks into the biscuit a little. These biscuits look fabulous. You will surely impress as they look as though you have put in a lot of effort. They just melt in the mouth and the raspberry jam is slightly tangy to offset the sweetness of the icing sugar. Ingredients

  • 125 g soft butter
  • 1 cup caster sugar
  • 2 eggs
  • 1 cup self-raising flour
  • 1 cup cornflour
  • 1/2 cup raspberry jam
  • 1 tbs icing sugar *to decorate

Method

  • Step 1
    Preheat oven to 190C fan-forced.
  • Step 2
    Cream butter and sugar. Beat in eggs, one at a time.
  • Step 3
    Mix in sifted flours.
  • Step 4
    Drop teaspoonfuls onto a baking tray leaving room for spreading.
  • Step 5
    Bake 8-10 minutes or until lightly golden. Cool on racks.
  • Step 6
    When cold sandwich biscuits together with jam and dust generously with icing sugar.
