A light fruit cake that is very quick to make.
Ingredients
- 1 tbs sugar
- 1 1/2 cup self-raising flour
- 1/2 cup sultanas
- 1/2 cup currants
- 1 pinch salt
- 1 egg
- 1/2 cup milk
- 1 tbs butter
- 1 cup icing *to serve
Method

Step 1Mix dry ingredients together.

Step 2Add melted butter, milk and egg. Stir until combined.

Step 3Place in a 26 cm x 8 cm x 5 cm deep log pan.

Step 4Bake at 180C for 30 minutes.

Step 5Drizzle with thin lemon icing when cool.
Recipe Notes
Add extra milk if mixture seems dry. Extra nice when spread with butter.
