Ingredients

  • 1 tbs sugar
  • 1 1/2 cup self-raising flour
  • 1/2 cup sultanas
  • 1/2 cup currants
  • 1 pinch salt
  • 1 egg
  • 1/2 cup milk
  • 1 tbs butter
  • 1 cup icing *to serve

Method

  • Step 1
    Mix dry ingredients together.

  • Step 2
    Add melted butter, milk and egg. Stir until combined.
  • Step 3
    Place in a 26 cm x 8 cm x 5 cm deep log pan.
  • Step 4
    Bake at 180C for 30 minutes.
  • Step 5
    Drizzle with thin lemon icing when cool.
Recipe Notes

Add extra milk if mixture seems dry. Extra nice when spread with butter.
