We love the way this slice isn’t overly rich yet somehow manages to have the perfect amount of sweetness. How to make jam slice: key tips

The key to making this jam slice is giving each layer enough time to cool before adding the next. This ensures that you end up with clearly distinguishable layers and stops the chance of any sogginess. 

What goes into our jam slice recipe?

The real hero of the jam slice is, unsurprisingly, the jam. I love a strawberry or raspberry jam, but you could really substitute in any jam you like. You could even make your own if you’ve got enough time (and energy). I love our strawberry and rhubarb jam, mixed berry jam, and redcurrant and raspberry jam recipes.

Ingredients

  • 1/2 cup icing sugar
  • 1 1/4 cups plain flour
  • 1/2 cup desiccated coconut
  • 125g butter, melted
  • 1 tsp vanilla essence
  • 1 cup strawberry or raspberry jam

Crumble topping

  • 1/2 cup brown sugar
  • 1/2 cup plain flour
  • 1/2 cup rolled oats
  • 1/2 tsp baking powder
  • 60g butter, melted

Method

  • Step 1
    Preheat oven to 160°C fan-forced. Line an 18cm x 28cm slice tin with baking paper.
  • Step 2
    In a medium bowl, combine icing sugar, flour and coconut. Add butter and vanilla, and stir with a wooden spoon until combined. Press into an even layer in prepared tin. Bake for 12 minutes until just starting to colour.
  • Step 3
    Allow to cool slightly in the tin, then spread jam in an even layer over the base.
  • Step 4
    For topping, combine sugar, flour, oats and baking powder in a small bowl. Add butter and mix to form clumps. Sprinkle clumps over jam layer. Bake for 12-15 minutes until golden.
  • Step 5
    Allow to cool then slice into squares or bars.
Recipe Notes

How long can I store this slice?

This slice keeps well for up to a week in an airtight container. You can pop it in the fridge or on the bench (as long as the weather’s not too hot). 

What other types of jam could I try in this recipe?

We recommend using a strawberry or raspberry jam, but you could really substitute in any jam you like. Apricot jam, orange jam, or lemon curd work well. You could even try a spiced jam for a festive variation on this jam slice recipe.
