What goes into our jam slice recipe?
The real hero of the jam slice is, unsurprisingly, the jam. I love a strawberry or raspberry jam, but you could really substitute in any jam you like. Ingredients
- 1/2 cup icing sugar
- 1 1/4 cups plain flour
- 1/2 cup desiccated coconut
- 125g butter, melted
- 1 tsp vanilla essence
- 1 cup strawberry or raspberry jam
Crumble topping
- 1/2 cup brown sugar
- 1/2 cup plain flour
- 1/2 cup rolled oats
- 1/2 tsp baking powder
- 60g butter, melted
Method

Step 1Preheat oven to 160°C fan-forced. Line an 18cm x 28cm slice tin with baking paper.

Step 2In a medium bowl, combine icing sugar, flour and coconut. Add butter and vanilla, and stir with a wooden spoon until combined. Press into an even layer in prepared tin. Bake for 12 minutes until just starting to colour.

Step 3Allow to cool slightly in the tin, then spread jam in an even layer over the base.

Step 4For topping, combine sugar, flour, oats and baking powder in a small bowl. Add butter and mix to form clumps. Sprinkle clumps over jam layer. Bake for 12-15 minutes until golden.

Step 5Allow to cool then slice into squares or bars.

How long can I store this slice?
This slice keeps well for up to a week in an airtight container. You can pop it in the fridge or on the bench (as long as the weather’s not too hot).
What other types of jam could I try in this recipe?
We recommend using a strawberry or raspberry jam, but you could really substitute in any jam you like. Apricot jam, orange jam, or lemon curd work well. You could even try a spiced jam for a festive variation on this jam slice recipe.
