A delicious winter dish that the whole family will enjoy.
Ingredients
- 1 1/2 kg chicken pieces
- 2 tbs dried breadcrumbs
- 2 tsp paprika
- 2 tbs fresh mixed herbs chopped
- 3 potatoes quartered
- 2 tbs oil
- 2 red onions cut into wedges
- 6 roma tomatoes quartered
- 2 1/2 tbs plain flour
- 2 cups chicken stock (liquid)
- 1 tbs soy sauce
Method

Step 1Preheat oven to 220C.

Step 2Coat chicken with combined breadcrumbs, paprika and herbs.

Step 3Place chicken in large baking pan with potato and drizzle with oil. Bake uncovered for 30 minutes.

Step 4Reduce oven to 200C. Add onion to chicken and bake, uncovered, for 30 minutes.

Step 5Place tomatoes on another oven tray and bake, uncovered, for 30 minutes.

Step 6Transfer chicken and vegetables into large serving dish and keep warm.

Step 7Place baking dish used to cook chicken on stove-top, stir in flour and cook until golden.

Step 8Whisk in the chicken stock and soy sauce, bringing it to the boil. Simmer until sauce thickens.

Step 9Pour sauce over chicken and serve with chopped parsley, if desired.
Recipe Notes
The sauce can be made in a saucepan whilst the chicken is cooking.
You can also use 4 large chicken Marylands.
Fresh herbs to use can be combined oregano, thyme and parsley.
