Tasty curry that can be made as hot or as mild as you like.
Ingredients
- 1 onion finely chopped large
- 2 cm ginger grated
- 500 g lean beef rump steak, thinly sliced
- 1 1/2 tbs oil
- 1 1/2 tbs curry powder *to taste
- 3/4 cup coconut milk
- 1/2 cup water
- 1 1/2 tbs tomato paste
- 3/4 cup long-grain white rice
- 1/4 tsp ground turmeric
- 1 cucumber thinly sliced
- 1 pinch fresh coriander *to decorate
Method

Step 1Heat half of the oil in a heavy frying pan. Brown meat and set aside.

Step 2Heat remaining oil, add ginger, onion and curry powder. Fry for a few minutes while stirring.

Step 3Return meat and season to taste.

Step 4Add coconut milk, water and tomato paste, bring to boil and cover. Simmer for 10 minutes.

Step 5Cook rice with turmeric until tender and drain.

Step 6Uncover curry and simmer for a further 10 minutes.

Step 7Serve hot with rice and sliced cucumber, sprinkle with coriander.
