Ingredients

  • 1 onion finely chopped large
  • 2 cm ginger grated
  • 500 g lean beef rump steak, thinly sliced
  • 1 1/2 tbs oil
  • 1 1/2 tbs curry powder *to taste
  • 3/4 cup coconut milk
  • 1/2 cup water
  • 1 1/2 tbs tomato paste
  • 3/4 cup long-grain white rice
  • 1/4 tsp ground turmeric
  • 1 cucumber thinly sliced
  • 1 pinch fresh coriander *to decorate

Method

  • Step 1
    Heat half of the oil in a heavy frying pan. Brown meat and set aside.
  • Step 2
    Heat remaining oil, add ginger, onion and curry powder. Fry for a few minutes while stirring.
  • Step 3
    Return meat and season to taste.
  • Step 4
    Add coconut milk, water and tomato paste, bring to boil and cover. Simmer for 10 minutes.
  • Step 5
    Cook rice with turmeric until tender and drain.
  • Step 6
    Uncover curry and simmer for a further 10 minutes.
  • Step 7
    Serve hot with rice and sliced cucumber, sprinkle with coriander.
