Impossible French apple and oat crumble pie

Ingredients

  • 410g tin sliced apple pie fruit
  • 4 eggs
  • 1 cup caster sugar
  • 125g butter, melted
  • 2 tsp vanilla essence
  • 1/2 cup plain flour
  • 1 cup desiccated coconut
  • 1 3/4 cups milk
  • 1 cup rolled oats

Method

  • Step 1
    Preheat oven to 180C. Grease a 26cm ceramic or cast iron pie dish with a little butter. Place apples in the base of the dish and sprinkle over 1/2 cup rolled oats.
  • Step 2
    In a stand mixer, whisk eggs with caster sugar until pale. Add butter and vanilla and whisk well. Add flour and coconut and beat until smooth. Pour in milk and whisk until just combined.
  • Step 3
    Pour batter into pie dish. Bake for 35 minutes, then sprinkle over remaining 1/2 cup oats and return to the oven for a further 10 minutes. The pie will be just set but still a little wobbly. Allow to cool before serving.
Recipe Notes

If you don’t have tinned apple, you can cook peeled and sliced apples until soft then add to the base of the pie dish.
