This pretty-in-pink rocky road is filled with Iced Vovos and all the usual players - marshmallows, nuts, cherries and coconut. Packaged up and tied with a pink bow, it’ll make a fabulous Christmas gift for friends, family and teachers.
Ingredients
- 500g white chocolate buttons, melted
- 210g Iced Vovo biscuits, chopped
- 1 cup (60g) mini marshmallows
- 1/2 cup (75g) macadamias
- 1/2 cup maraschino cherries, stems removed
- 3/4 cup shredded coconut
Method

Step 1Grease an 18cm x 25cm slice tin and line it with baking paper, leaving a little overhanging the edges to make it easy to lift the finished slice out.

Step 2In a large bowl, combine melted chocolate with Iced Vovos, marshmallows, macadamias, Cheries and 1/2 cup coconut. Pour into prepared tin and press into an even-ish layer. Sprinkle over remaining coconut. Refrigerate for 30 minutes until set.

Step 3Use overhanging paper to lift slice out onto a chopping board. Cut into squares.
Recipe Notes
White chocolate is notoriously temperamental when it comes to melting. I use melting buttons and melt in a large bowl over a saucepan of simmering water. You can also melt in bursts in the microwave.
