Ingredients

  • 140g plain flour
  • 4 eggs
  • 200ml milk
  • 1/2 cup olive oil
  • 1 tbs horseradish cream

Method

  • Step 1
    Heat oven to 230C. Pour a small amount of olive oil into each muffin tin (I used two). Place in the oven to heat.
  • Step 2
    Tip flour into a bowl and beat in eggs until smooth.
  • Step 3
    Gradually add the milk and beat until mix is no longer lumpy.
  • Step 4
    Season with salt and pepper and stir through the horseradish.
  • Step 5
    Place the tins back in oven and leave 20 minutes until puffed and golden. Serve immediately.

They can be cooled and frozen for up to a month,
