Ingredients

  • 1 tbs olive oil
  • 1 tbs plain flour
  • 6 chicken thighs on the bone
  • 2 carrots, peeled and sliced
  • 1 red onion, sliced into wedges
  • small bunch thyme
  • 1/2 cup Massel* Chicken Style Liquid Stock
  • 1/3 cup honey
  • 1/3 cup seeded mustard

Method

  • Step 1
    Preheat oven to 200C.
  • Step 2
    Heat oil in a large ovenproof casserole that can also go on the stovetop.
  • Step 3
    Season chicken pieces with salt and pepper and dust lightly in flour.
  • Step 4
    Brown the seasoned chicken in the oil on all sides, then set aside.
  • Step 5
    Remove casserole dish from the stove top and place carrots, onion and sprigs of thyme in the base. Top with browned chicken pieces and pour over chicken stock.
  • Step 6
    Combine honey and mustard in a bowl, then spoon over chicken pieces.
  • Step 7
    Cover dish with foil and bake for 20 minutes, then remove foil and return to the oven for a further 20 minutes.
Recipe Notes

Notes:

  • Try to find chicken thighs with the bone in and the skin on. You could use drumsticks or thigh fillets as well.
  • Serve with mashed potato and steamed vegetables.
