You won’t be able to resist the aromas of this honey mustard chicken as it beautifully bakes away in the oven.
Ingredients
- 1 tbs olive oil
- 1 tbs plain flour
- 6 chicken thighs on the bone
- 2 carrots, peeled and sliced
- 1 red onion, sliced into wedges
- small bunch thyme
- 1/2 cup Massel* Chicken Style Liquid Stock
- 1/3 cup honey
- 1/3 cup seeded mustard

Method

Step 1Preheat oven to 200C.

Step 2Heat oil in a large ovenproof casserole that can also go on the stovetop.

Step 3Season chicken pieces with salt and pepper and dust lightly in flour.

Step 4Brown the seasoned chicken in the oil on all sides, then set aside.

Step 5Remove casserole dish from the stove top and place carrots, onion and sprigs of thyme in the base. Top with browned chicken pieces and pour over chicken stock.

Step 6Combine honey and mustard in a bowl, then spoon over chicken pieces.

Step 7Cover dish with foil and bake for 20 minutes, then remove foil and return to the oven for a further 20 minutes.

Notes:
- Try to find chicken thighs with the bone in and the skin on. You could use drumsticks or thigh fillets as well.
- Serve with mashed potato and steamed vegetables.
