With its sweet and tangy honey mustard dressing, you’ll be adding this delicious chicken pasta salad to your summer repertoire!
Ingredients
- 200g macaroni
- 1 cup frozen corn kernels
- 1-2 cups leftover cooked chicken, chopped or shredded
- 80g leg ham, sliced
- 1/2 small red onion, finely sliced
- 1 tbsp parsley, chopped
For dressing
- 1/4 cup olive oil
- 1 tbsp honey
- 1 tbsp seeded mustard
- 2 tbsp egg mayonnaise
- 1/4 cup creme fraiche or sour cream
Method

Step 1Cook macaroni according to packet instructions. Drain and rinse under cold water. Cook corn according to packet instructions. Drain and refresh under cold water.

Step 2In a large bowl, whisk together all of the dressing ingredients. Add cooked and cooled macaroni and corn, as well as chicken, ham and onion. Stir to combine, ensuring everything is well coated in the creamy dressing. Season well with salt and pepper. Place in serving bowl and sprinkle over parsley.
Recipe Notes
I used regular macaroni but you can use any short pasta.
Use canned corn or even cooked fresh corn if in season.
