A quick and easy midweek meal with heaps of flavour.
Ingredients
- 4 tbs honey
- 2 tbs soy sauce
- 4 tbs olive oil
- 1 tsp garlic crushed
- 2 tsp ginger crushed
- 750 g pork fillet
- 2 pear cut into wedges peeled
- 2 carrot broken into chunks
- 4 potato cut into wedges
Method

Step 1Preheat oven to 180C.

Step 2Combine the honey, soy, 2 tablespoons of oil, garlic and ginger in a dish. Add pork fillets, marinate for 15 minutes.

Step 3Add the potatoes, carrots and pear in remaining oil and toss to coat. Add to a baking tray and bake for 25 minutes.

Step 4Add the pork to the baking tray and pour over marinade. Cook for 15 minutes or until pork is cooked as desired.

Recipe Notes
I serve this dish with other vegetables, such as peas and corn. Serve pork with pears on top and any remaining marinate in the baking dish as sauce. Peel and cut pears into wedges, cut carrots into large chunks and cut potatoes into wedges.
