Ingredients

  • 5 egg separated
  • 100 g caster sugar
  • 100 ml sunflower oil
  • 100 ml honey
  • 200 g plain flour
  • 2 tsp baking powder
  • 50 g mixed nuts finely chopped

Method

  • Step 1
    Preheat oven to 200C and prepare a 20 cm square tin by brushing with oil, then dusting with flour.
  • Step 2
    Beat the egg yolks with sugar, then add the oil, honey, flour, baking powder and nuts.
  • Step 3
    In a separate bowl, beat the egg whites until stiff. Fold the two mixtures together.
  • Step 4
    Pour the mix into the prepared tin, reduce oven temperature to 180C and bake for 25-30 minutes or until a skewer comes out clean.
  • Step 5
    Cool on a rack, then cut into cubes and serve.

  • 1 bamboo skewers
  • 1 wire rack
  • 1 knife
Recipe Notes

Use sunflower, walnut or hazelnut oil and nuts e.g. walnuts, almonds, hazelnuts.
