Simple and delicious. They are lovely and the honey flavour comes as an excellent surprise.
Ingredients
- 5 egg separated
- 100 g caster sugar
- 100 ml sunflower oil
- 100 ml honey
- 200 g plain flour
- 2 tsp baking powder
- 50 g mixed nuts finely chopped
Method

Step 1Preheat oven to 200C and prepare a 20 cm square tin by brushing with oil, then dusting with flour.

Step 2Beat the egg yolks with sugar, then add the oil, honey, flour, baking powder and nuts.

Step 3In a separate bowl, beat the egg whites until stiff. Fold the two mixtures together.

Step 4Pour the mix into the prepared tin, reduce oven temperature to 180C and bake for 25-30 minutes or until a skewer comes out clean.

Step 5Cool on a rack, then cut into cubes and serve.

Recipe Notes
Use sunflower, walnut or hazelnut oil and nuts e.g. walnuts, almonds, hazelnuts.
