A versatile, easy homemade basil pesto recipe that can be varied to use up a variety of other fresh herbs. Tastes much better than the jars you buy and so easy to make.
Ingredients
- 125 g parmesan cheese grated
- 2 cup garlic clove
- 1/2 cup pine nuts
- 1 cup fresh basil tightly packed
- 1/2 cup oil
Method

Step 1In a food processor, process cheese, garlic, nuts and basil until finely chopped.

Step 2With motor still running slowly pour oil in through feed tube.

Step 3Process until thickened and combined. Scrape bowl and process further, if required.

Step 4Serve as is mixed through hot pasta, on chargrilled meat or on pizza.

Recipe Notes
You can vary the herb used to create other pestos e.g. mint, parsley or a mix of fresh herbs. If a creamy pesto is desired (e.g. for creamy chicken pesto or pasta salad) add carnation milk, cream or sour cream until desired consistency is reached (this is best done by hand). Walnuts can substitute pine nuts.
