How to make homemade crumpets: key tips
In step 2, don’t overbeat the mixture or the flour will be overworked and your crumpets will become too dense. Instead, stir the mixture until it is just combined.
As yeast needs a little time to ‘do its yeasty thing’ and the heat of your kitchen will play a part, cover your bowl with plastic wrap and place it in a very warm place for 15-30 minutes or until the surface of your mixture gets nice and foamy.
Choose a flat-bottomed frying pan to cook your crumpets so that they cook evenly. Don’t worry too much if you don’t have egg rings; they will help to create a nice shape, but your crumpet mixture is quite thick and so they will hold their own okay without the rings.

Ingredients
- 4 cups plain flour
- 2 tbs baking powder
- 1 1/2 tsp salt
- 1 1/2 tsp sugar
- 3 cups lukewarm water
- 15 g compressed yeast
Method

Step 1Sift together in a bowl, flour, baking powder, sugar and salt.

Step 2Dissolve yeast in warm water, add to dry ingredients, beat until smooth.

Step 3Lightly grease a frying pan and the inside of egg rings.

Step 4Place rings in pan to heat. When hot, reduce heat and fill with batter, allowing space for mixture to rise.

Step 5Cook for 10 minutes over low heat or until crumpets have holes in surface, remove rings from pan.

Step 6Cover pan, and cook for 3 minutes until set.

Step 7Remove crumpets from pan.

Step 8Allow to cool.

Compressed yeast is fresh yeast that perishes easily and must be refrigerated and used quickly, while active dry yeast is way more stable and can last for years in the pantry.
Can I make homemade crumpets ahead of time?
Sure, and you can freeze them, too! Make a double (or triple) batch and freeze the extras for up to 3 months wrapped in plastic wrap and placed inside a sealable bag. Freeze in portions to suit your family and then defrost in the fridge the night before toasting and serving.
