With a lovely crust, fluffy texture, not overly sweet and laced with warm spices, this healthier vegan banana bread is all you’ve hoped for and more! If you like your banana bread on the sweeter side, simply serve with some extra maple syrup.
Ingredients
- 2 tbsp flaxseed meal (see note)
- 300g pkt wholemeal spelt flour
- 2 tsp baking powder
- 1 tsp bicarbonate of soda
- 2 tbsp black and white chia seeds
- 2 tsp mixed spice
- 125ml pure maple syrup, plus 1 tbsp extra to brush
- 125ml extra virgin coconut oil
- 2 ripe bananas, mashed
- 125ml almond milk

Step 1Preheat oven to 180C/160C fan-forced. Grease a 7cm-deep, 11cm x 21cm (top) loaf pan. Line base and sides with 2 layers of baking paper, extending paper 2cm above edges of pan.

Step 2Combine flaxseed and ⅓ cup water in a small bowl. Stand for 15 minutes.

Step 3Whisk flour, baking powder, bicarbonate of soda, chia seeds and mixed spice in a large bowl. Make a well in the centre. Add maple, oil, banana, milk and flaxseed mixture to well. Stir gently until just combined.

Step 4Pour into prepared pan and level top. Bake for 1 hour or until a skewer inserted into the centre comes out clean.

Step 5Brush top with extra maple and cool in pan for 10 minutes. Transfer to a wire rack to cool. Serve warm or at room temperature.
