A simple, creamy salad that is both pretty and a great way to use up ham.
Ingredients
- 250g (half a packet) pasta bows
- 100g leftover leg ham, chopped
- 2 spring onions, chopped
- 1 large cucumber, chopped
- 1/2 cup tinned beetroot, chopped
- Good quality mayonnaise or Caesar dressing
Method

Step 1Cook the pasta bows in boiling, salted water until al dente. Drain, rinse and cool.

Step 2Add the pasta to a large bowl, and top with (in order) chopped ham, spring onions, cucumber and beetroot. Drizzle with mayonnaise or Caesar dressing and serve immediately.
Recipe Notes
Note: this would be super yummy with walnuts or sunflower seeds added to it as well.
