Ham and bowtie pasta salad

Ingredients

  • 250g (half a packet) pasta bows
  • 100g leftover leg ham, chopped
  • 2 spring onions, chopped
  • 1 large cucumber, chopped
  • 1/2 cup tinned beetroot, chopped
  • Good quality mayonnaise or Caesar dressing

Method

  • Step 1
    Cook the pasta bows in boiling, salted water until al dente. Drain, rinse and cool.
  • Step 2
    Add the pasta to a large bowl, and top with (in order) chopped ham, spring onions, cucumber and beetroot. Drizzle with mayonnaise or Caesar dressing and serve immediately.
Recipe Notes

Note: this would be super yummy with walnuts or sunflower seeds added to it as well.
