Ingredients

  • 3 avocados ripe
  • 3 limes
  • 1 pinch salt and pepper
  • 1 large tomato diced
  • 1/4 red onion finely diced
  • 1/4 cup coriander leaves torn
  • 1 jalapeno finely diced
  • 1/2 cup frozen peas crushed thawed
  • 1/4 cup mint leaves shredded
  • 1 spring onion sliced
  • 1 pinch chilli flakes
  • 1 packet tortilla chips *to serve
  • 1 lime quartered *to serve

Method

  • Step 1
    Cut avocados in half and remove seeds. Roughly mash the flesh and separate into three small bowls, reserve shells for serving.
  • Step 2
    To the first avocado bowl: Stir through the juice of one lime and add salt and pepper to taste. Spoon the guacamole back into one of the avocado shells.
  • Step 3
    To the second avocado bowl: Mix through tomato, red onion, coriander and jalapeno pepper. Add lime juice and salt and pepper to taste. Spoon the avocado salsa fresca guacamole into two reserved avocado shells.
  • Step 4
    To the third avocado bowl: Mix through crushed peas, mint and spring onion. Stir in lime juice and salt and pepper to taste. Spoon the avocado, pea and mint guacamole into two of the remaining avocado shells and top with a sprinkle of chilli flakes.
  • Step 5
    Serve guacamole-filled shells with tortilla chips and extra lime wedges.
Recipe Notes

For less clean-up, you can mash the avocado and mix the guacamole straight in the avocado shells.
