Ingredients

  • 1 pack Castello Fetta Cubes in Oil with Black Olives, with olives pitted
  • 200 g lean lamb steak or fillet
  • 2 flatbreads wraps
  • 1/3 cup greek-style yoghurt
  • 2/3 cup loosely packed parsley leaves
  • 8 cherry tomatoes, halved
  • 1 red onion
  • Black pepper

Method

  • Step 1
    Preheat a chargrill to high and brush the lamb with some of the oil from the fetta pack.
  • Step 2
    Season well with black pepper.
  • Step 3
    Cook for 3 minutes on each side or until cooked to your liking.
  • Step 4
    Cover loosely with foil and set aside to rest for a few minutes.
  • Step 5
    Grill the flatbread and smear with yoghurt.
  • Step 6
    Slice the rested lamb and place on top of the yoghurt.
  • Step 7
    Scatter the parsley, red onion and tomato on top.
  • Step 8
    Add the fetta cubes with pitted black olives and drizzle over any remaining oil.
