Succulent chargrilled lamb, fresh salad and creamy fetta wrapped in a soft flat bread makes a super quick and tasty weeknight meal.
Ingredients
- 1 pack Castello Fetta Cubes in Oil with Black Olives, with olives pitted
- 200 g lean lamb steak or fillet
- 2 flatbreads wraps
- 1/3 cup greek-style yoghurt
- 2/3 cup loosely packed parsley leaves
- 8 cherry tomatoes, halved
- 1 red onion
- Black pepper
Method

Step 1Preheat a chargrill to high and brush the lamb with some of the oil from the fetta pack.

Step 2Season well with black pepper.

Step 3Cook for 3 minutes on each side or until cooked to your liking.

Step 4Cover loosely with foil and set aside to rest for a few minutes.

Step 5Grill the flatbread and smear with yoghurt.

Step 6Slice the rested lamb and place on top of the yoghurt.

Step 7Scatter the parsley, red onion and tomato on top.

Step 8Add the fetta cubes with pitted black olives and drizzle over any remaining oil.
