Ingredients

  • 5 1/2 kg green tomato sliced
  • 2 kg onion sliced
  • 1/2 cup salt
  • 1 1/2 kg sugar
  • 1 tbs mustard powder
  • 1 tbs curry powder
  • 1 tbs cornflour
  • 2 tsp ground turmeric
  • 375 ml Ezy-sauce

Method

  • Step 1
    Place tomatoes, onions and salt into a dish.

  • Step 2
    Stand for 12 hours then empty into a large saucepan. Bring to the boil.
  • Step 3
    Add sugar and sauce.
  • Step 4
    Simmer, uncovered, for 2 hours or until a thick spooning consistency.
  • Step 5
    Combine mustard powder, curry powder, cornflour and turmeric with sufficient water to make a smooth paste.
  • Step 6
    Add to pan whilst stirring continuously. Cook for a further 10 minutes.
  • Step 7
    Carefully pour into hot sterilised bottles and seal.

Makes approximately 5½ litres.
