Traditional pickles for an over abundance of green tomatoes.
Ingredients
- 5 1/2 kg green tomato sliced
- 2 kg onion sliced
- 1/2 cup salt
- 1 1/2 kg sugar
- 1 tbs mustard powder
- 1 tbs curry powder
- 1 tbs cornflour
- 2 tsp ground turmeric
- 375 ml Ezy-sauce
Method

Step 1Place tomatoes, onions and salt into a dish.

Step 2Stand for 12 hours then empty into a large saucepan. Bring to the boil.

Step 3Add sugar and sauce.

Step 4Simmer, uncovered, for 2 hours or until a thick spooning consistency.

Step 5Combine mustard powder, curry powder, cornflour and turmeric with sufficient water to make a smooth paste.

Step 6Add to pan whilst stirring continuously. Cook for a further 10 minutes.

Step 7Carefully pour into hot sterilised bottles and seal.
