Fresh, crunchy and full of flavour, Greek salad is a perennial favourite, and great on the side with grilled lamb, burgers or vegetable skewers. Best of all, it's ready in under 15 minutes!
Ingredients
- 4 tomatoes cut into pieces
- 1 cucumber cubed unpeeled
- 1 green capsicum cut into matchsticks
- 2 tbs olive oil
- 1 tbs lemon juice
- 1/2 tsp salt and pepper
- 200 g fetta
- 20 kalamata olives
- 1 red onion thinly sliced
- 1 tsp fresh oregano chopped
- 1 tsp fresh dill chopped
- 1/2 tsp dried oregano
Method

Step 1Combine olive oil, lemon juice, salt, pepper and stir well.

Step 2Place tomatoes, cucumber and capsicum in a bowl and pour the dressing over.

Step 3Top with fetta and scatter with olives, red onion, fresh herbs and dried oregano.

Can I add lettuce leaves to a Greek salad?
Traditionally, lettuce leaves don't go in a Greek salad, but if you'd like to include them in this salad, go ahead! We suggest roughly chopped cos lettuce, as the crisp leaves will tie in well with the other ingredients.
Is fetta cheese healthy?
Greek fetta cheese is a good source of protein and calcium, but like most cheese it is a source of fat, plus it is relatively high in sodium. This salad has 50g fetta per serve, but you can reduce the portions or omit altogether, if you prefer.
