A beautiful and tasty recipe for meatballs.
Ingredients
- 4 beetroot fresh small
- 500 g beef mince
- 2 garlic clove finely chopped
- 2 tbs mint chopped
- 2 egg
- 1/2 cup fresh breadcrumbs
- 1/4 tbs lemon zested
- 100 g couscous cooked
- 1 tbs olive oil
Yoghurt sauce
- 200 g natural yoghurt
- 1/4 tsp fresh mint chopped
- 1 tsp mint sauce thick
- 1/2 garlic clove finely chopped
- 1 tbs lemon juice
Method

Step 1Wrap beetroot in foil individually with a small amount of pepper and salt.

Step 2Combine mince, mint, garlic, lemon zest, eggs and breadcrumbs in bowl.

Step 3Mix thoroughly by hand.

Step 4Shape into small meatballs and refrigerate for 30 minutes.

Step 5Preheat oven to 200C.

Step 6Place meatballs in a roasting dish with a small amount of olive oil.

Step 7Place beetroot on oven tray.

Step 8Bake for 20-25 minutes.

Step 9Combine yoghurt, mint, mint sauce, lemon juice and chopped garlic in bowl. Refrigerate.
Recipe Notes
Serve with roast beetroot, yoghurt sauce, couscous and a wedge of lemon and warmed naan bread.
