If you need a simple, delicious cake to feed a crowd, this golden syrup slab cake is just the ticket. The rich syrupy flavour is in both the cake and icing - just yum!
Ingredients
- 200g butter
- 1/2 cup brown sugar
- 1/2 cup golden syrup
- 2 cups self-raising flour
- 1/2 tsp baking powder
- 1/2 tsp bicarb soda
- 1 tsp ground cinnamon
- 2 eggs, lightly beaten
- 2 tsp vanilla essence
- 3/4 cup milk
- 1/2 tsp vinegar
For the icing
- 1 cup icing sugar, sifted
- 80g butter, very soft
- 3 tbsp golden syrup
- 2 tbsp milk

Step 1Preheat oven to 170C. Grease an 18cm x 27cm slice tin and line with baking paper, allowing a 3cm overhang.

Step 2In a small saucepan, melt butter with brown sugar and golden syrup. Set aside to cool slightly. In a large bowl, whisk together flour, baking powder, bicarb soda and cinnamon. Whisk in melted butter mixture, eggs and vanilla. Combine milk and vinegar in a small jug and allow to sit for 1 minute. Add to cake better and whisk until smooth.

Step 3Pour into prepared tin and bake for 25 minutes. Remove cake from tin and allow to cool on a rack.

Step 4To make icing, beat together all ingredients until smooth. Pour icing over cake and spread out evenly.
Recipe Notes
There’s no need to soften your butter for this recipe. It’s an easy melt-and-mix
Adding vinegar to your milk curdles it slightly, which then reacts with the baking powder and bicarb for extra fluff and bounce. You can replace with buttermilk instead.
