Ingredients

  • 8 potato medium
  • 50 g butter melted
  • 1/4 cup olive oil
  • 1/2 tsp paprika

Method

  • Step 1
    Preheat oven to 200C.
  • Step 2
    Wash and peel potatoes.
  • Step 3
    Boil potatoes for 5 minutes; drain. Pat dry using absorbent paper.
  • Step 4
    Using the prongs of a fork, scrape the potatoes to form a rough surface.
  • Step 5
    Place potatoes in a shallow baking dish. Brush liberally with combined butter and oil. Sprinkle with paprika and bake for 20 minutes.
  • Step 6
    Remove from oven, brush with butter mixture. Return to oven for further 20 minutes.
  • Step 7
    Repeat this process again and bake for a further 20 minutes. Serve hot.
