Being a fussy eater as a child, my parents found it difficult for me and my siblings to eat vegetables so by giving us "special golden potatoes" we were more than happy to eat it without ever knowing just what made it so special.
Ingredients
- 6 potato chopped large peeled washed
- 50 g butter
- 125 ml milk
- 125 ml thickened cream
- 2 cup pumpkin chopped
- 1 pinch salt and pepper
Method

Step 1In a large saucepan, add pumpkin and potatoes together, cover with water and bring to the boil, simmer until tender 10-12 minutes.

Step 2Drain water from the pot.

Step 3Using a sieve or sifter, push the potato and pumpkin back into the saucepan using a wooden spoon or spatula.

Step 4Return saucepan to low heat.

Step 5Add butter then stir until combined.

Step 6Add cream and stir until combined.

Step 7Add milk and stir until combined.

Step 8Season well and serve.
Recipe Notes
If you don't have a sifter a blender can also be used. Best potatoes for this recipe are Desiree or Golden Delight. Best pumpkin for this recipe is the Kent pumpkin.
