If you love passionfruit, then this is the cake for you - both the cake and the icing are flavoured with passionfruit with a delicious double whammy result.
Ingredients
- 125 g butter
- 3/4 cup caster sugar
- 2 eggs
- 2 cups self-raising flour
- 1/2 cup milk
- 2 x 180ml cans passionfruit pulp
Icing
- 1 tbs soft butter
- 1 1/2 cups icing sugar
Method

Step 1Preheat oven to 180C.

Step 2Cream butter and sugar.

Step 3Add eggs and mix.

Step 4Add sifted flour alternating with milk.

Step 5Add half the passionfruit pulp (seeds removed) and mix well.

Step 6Pour into paper-lined or greased cake tin, or a bundt tin.

Step 7Cook for approximately 40 minutes or until skewer inserted into cake comes out clean.

Step 8Icing: Mix butter with icing sugar until well combined.

Step 9Add the remaining passionfruit pulp and mix well.

Step 10When cake is completely cooled, split it in half lengthways. Ice lower half with ⅓ of the icing. Or ice the top of the bundt cake.

Step 11Place the top back on and ice with the remaining icing.
Recipe Notes
This cake is very golden in colour and may look cooked before it actually is, so I recommend testing with a skewer.
