Ingredients

Base

  • 120 g butter
  • 60 g brown sugar
  • 180 g self-raising flour
  • 1/2 tsp ground ginger
  • 1 pinch salt

Icing

  • 60 g butter
  • 60 g icing sugar
  • 1/2 tsp ground ginger
  • 2 tsp golden syrup

Method

  • Step 1
    Base: Rub ingredients together until light brown.
    Ginger Slice
  • Step 2
    Press into a shallow pan lined with baking paper.
  • Step 3
    Bake 20-30 minutes 170C (fan-forced oven) or 180C (regular oven).
  • Step 4
    Icing: Place all ingredients into saucepan and melt.
  • Step 5
    Spread onto slice base.
  • Step 6
    Cut while still warm into pieces of desired size.
Recipe Notes

This recipe can be frozen. If you like a really strong ginger flavour add more ground ginger if you like. Can be eaten warm or cold, nice with coffee or tea.
