Ingredients

  • 6 egg
  • 1 cup sugar
  • 3/4 cup cornflour
  • 2 tbs self-raising flour
  • 2 tsp ground ginger
  • 2 tsp ground cinnamon
  • 1 1/2 tsp cocoa
  • 2 tsp baking powder
  • 1 tbs golden syrup
  • 4 tbs boiling water
  • 1 tsp butter

Method

  • Step 1
    Pre-heat oven to 180C or 160C fan forced.
  • Step 2
    Beat together eggs and sugar until thick and creamy.
  • Step 3
    Sift dry ingredients three times.

    Gradually add dry ingredients to the mixture, in three different lots.
  • Step 5
    Fold lightly with a metal spoon.
  • Step 6
    Lastly melt the butter and golden syrup in the boiling water.
  • Step 7
    Stir around the edge of mixture.
  • Step 8
    Bake in two greased and lined sponge pans for 20 minutes.
Recipe Notes

It's a recipe we have always enjoyed and a little different to a sponge and great for that special occasion. Nice sandwiched together with jam and whipped cream,as well as cream on top and sliced strawberries, or whatever you desire.
