A good old fashioned sponge recipe.
Ingredients
- 6 egg
- 1 cup sugar
- 3/4 cup cornflour
- 2 tbs self-raising flour
- 2 tsp ground ginger
- 2 tsp ground cinnamon
- 1 1/2 tsp cocoa
- 2 tsp baking powder
- 1 tbs golden syrup
- 4 tbs boiling water
- 1 tsp butter
Method

Step 1Pre-heat oven to 180C or 160C fan forced.

Step 2Beat together eggs and sugar until thick and creamy.

Step 3Sift dry ingredients three times.

Step 4Gradually add dry ingredients to the mixture, in three different lots.

Step 5Fold lightly with a metal spoon.

Step 6Lastly melt the butter and golden syrup in the boiling water.

Step 7Stir around the edge of mixture.

Step 8Bake in two greased and lined sponge pans for 20 minutes.
Recipe Notes
It's a recipe we have always enjoyed and a little different to a sponge and great for that special occasion. Nice sandwiched together with jam and whipped cream,as well as cream on top and sliced strawberries, or whatever you desire.
