Reinventing this Aussie classic with a touch of spice.
Ingredients
- 3 very ripe bananas, mashed
- 1/2 cup brown sugar
- 2 eggs
- 2/3 cup Bundaberg Ginger Beer
- Pinch of cinnamon
- Pinch of nutmeg
- Pinch of mixed spice
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1/2 cup unsalted butter, melted
Method

Step 1Pre-heat oven to 180 degrees Celcius and grease and flour 9 x 5 inch loaf pan.

Step 2Mash the bananas and add the dry ingredients.

Step 3Pour in the Ginger Beer. Stir everything together and then fold in the melted butter and spices.

Step 4Pour batter into prepared loaf pan and place in pre-heated oven.

Step 5Bake for 60 minutes. Remove when baked (a skewer inserted in the middle should come out clean) and the crust is browned and crackling.

Step 6Cool in the pan for a few minutes then cool on a wire rack for another 10 minutes or so before slicing and serving!
