A colourful alternative to cheesecake. Perfect to delight the kids and big kids too.
Ingredients
- 250 g sweet plain biscuits
- 125 g butter melted
- 255 g jelly crystals (use any flavours you like)
- 4 tsp gelatine powder
- 2 tbs icing sugar
- 300 ml cream
- 1 cup pineapple juice
- 3 cup boiling water
Method

Step 1Prepare jelly with boiling water and pour into 3 trays or containers. Set well.

Step 2Process biscuits crumbs, add melted butter and press into a lined spring form pan and chill.

Step 3Cut up jelly into small cubes and set aside in fridge.

Step 4Dissolve gelatine in warm pineapple juice, allow to cool but not set.

Step 5Lightly whip cream with icing sugar. Reserve half a cup of whipped cream.

Step 6Add pineapple and gelatine mix to whipped cream and combine thoroughly.

Step 7Stir through jelly cubes, then pour onto crumb crust.

Step 8Refrigerate until firm.

Step 9Smooth reserved whipped cream over the top.
