Ingredients

  • 250 g sweet plain biscuits
  • 125 g butter melted
  • 255 g jelly crystals (use any flavours you like)
  • 4 tsp gelatine powder
  • 2 tbs icing sugar
  • 300 ml cream
  • 1 cup pineapple juice
  • 3 cup boiling water

Method

  • Step 1
    Prepare jelly with boiling water and pour into 3 trays or containers. Set well.
  • Step 2
    Process biscuits crumbs, add melted butter and press into a lined spring form pan and chill.
  • Step 3
    Cut up jelly into small cubes and set aside in fridge.
  • Step 4
    Dissolve gelatine in warm pineapple juice, allow to cool but not set.
  • Step 5
    Lightly whip cream with icing sugar. Reserve half a cup of whipped cream.
  • Step 6
    Add pineapple and gelatine mix to whipped cream and combine thoroughly.
  • Step 7
    Stir through jelly cubes, then pour onto crumb crust.
  • Step 8
    Refrigerate until firm.
  • Step 9
    Smooth reserved whipped cream over the top.
