Ingredients

  • 1 packs English muffins
  • 200 g salami sliced
  • 3 egg
  • 1 tub French onion dip
  • 1 tsp tomato sauce broken into squares
  • 3 slices tasty cheese sliced small broken into squares
  • 2 Lebanese cucumber sliced small
  • 1/2 punnet cherry truss tomato
  • 2 sprigs parsley *to decorate

Method

  • Step 1
    Place eggs in a saucepan of water and bring to boil allow to boil for a further 3 minutes until eggs are well done. Remove eggs and place in a cold water bath before peeling and slicing eggs.
  • Step 2
    Open out muffins and spread each side with French onion dip.
  • Step 3
    Add a squeeze of tomato sauce to the remaining French onion dip and stir to combine. Cut cheese slices into 4 squares each.
  • Step 4
    To assemble muffins. add a slice of salami, cheese, cucumber, sliced egg and tomato. Top with a small dollop of the French onion and tomato mixture and garnish with parsley.
