A quick and easy side dish.
Ingredients
- 500 g mushrooms sliced
- 500 g baby spinach
- 3 tbs olive oil
- 3 tbs butter
- 1 tbs parsley
- 3 tbs garlic minced topped
- 1 pinch salt and pepper *to taste
Method

Step 1Heat olive oil and butter in a large non-stick frying pan. Add garlic.

Step 2Add mushrooms and cook for 4-6 minutes, over medium heat.

Step 3Add parsley and stir while cooking.

Step 4Add half the spinach and fold through.

Step 5Spread the remaining spinach leaves to top again and cover pan for 1-2 minutes.

Step 6Stir together while seasoning with salt and pepper.

- 1 frying pan
Recipe Notes
Choose your favourite mushrooms or use a mushroom medley. I actually use lemon pepper but it is a personal preference. Serve as a side with home-made pork or chicken schnitzel and country potatoes. Use butter or margarine. Minced garlic or fresh cloves.
