Fussy Eater Vegetable Triangles

I played around in the kitchen to find a recipe my fussy son would eat and that was packed full of vegetables. I made these when my son wasn't around, so he didn't see what went into them! Mission accomplished! Also, perfect for lunch boxes. - barnesymum

Ingredients

  • 3 sheets puff pastry thawed
  • 2 potatoes large peeled quartered
  • 2 cups frozen mixed vegetables
  • 2 1/2 tsp Vegeta vegetable stock powder
  • 220 g canned baked beans
  • 2 tbs milk
  • 3 tbs margarine
  • 1 cup cheese grated

Method

  • Step 1
    Place potato in a microwave dish with a tablespoon of water, cover and cook for 8 minutes or until just tender.
  • Step 2
    Add mixed vegetables and cook for a further 3 minutes then drain.
  • Step 3
    Add stock, milk, and margarine, puree or mash until smooth.
  • Step 4
    Stir through baked beans and cheese, mix well.
  • Step 5
    Cut pastry sheets into 4 squares, spread 2 teaspoons of mixture into the middle of each square.
  • Step 6
    Using a finger, wipe water around each edge of pastry, fold diagonally over to make a triangle, push edges down with a fork.
  • Step 7
    Brush with milk and place onto a lined baking tray.
  • Step 8
    Bake at 180C for 10-15 minutes or until golden brown.
Recipe Notes

The filling does ooze slightly when you are folding but that is okay.
