I played around in the kitchen to find a recipe my fussy son would eat and that was packed full of vegetables. I made these when my son wasn't around, so he didn't see what went into them! Mission accomplished! Also, perfect for lunch boxes.
Ingredients
- 3 sheets puff pastry thawed
- 2 potatoes large peeled quartered
- 2 cups frozen mixed vegetables
- 2 1/2 tsp Vegeta vegetable stock powder
- 220 g canned baked beans
- 2 tbs milk
- 3 tbs margarine
- 1 cup cheese grated
Method

Step 1Place potato in a microwave dish with a tablespoon of water, cover and cook for 8 minutes or until just tender.

Step 2Add mixed vegetables and cook for a further 3 minutes then drain.

Step 3Add stock, milk, and margarine, puree or mash until smooth.

Step 4Stir through baked beans and cheese, mix well.

Step 5Cut pastry sheets into 4 squares, spread 2 teaspoons of mixture into the middle of each square.

Step 6Using a finger, wipe water around each edge of pastry, fold diagonally over to make a triangle, push edges down with a fork.

Step 7Brush with milk and place onto a lined baking tray.

Step 8Bake at 180C for 10-15 minutes or until golden brown.
Recipe Notes
The filling does ooze slightly when you are folding but that is okay.
